Summer is awesome. I love the flowers, the greenery and the heat that comes with it.
Summer was one of my favourite times in childhood because it meant no school, no homework and going back to the UK to see my friends. It was a tradition of ours to fly back every year to see everyone and it was something I always looked forward to.
Another summer tradition was an annual camping trip with our friends and their families. We went to different places over the years, but every year we would camp for a week or so. Eventually we rented a house instead, which was much more comfortable than a tent and still just as fun. However as we got even older, we stopped going. While we no longer go camping, I still have fond memories of it.
Memories aside, summer is warm and that means tanning time! Well if I ever actually tan, but it’s not so good for anyone who likes cooking or baking. Even in Ireland, the kitchen can get too hot and the thought of turning on the oven when it’s like the inside of the sun is unappealing to say the least.
That’s why I love this recipe. Recipes with Nutella, cookies and oats to add a little more healthiness are alright in my book. There are lots of no bake cookie recipes, but these ones are really good, so trust me and try them.
Using Nutella, almond milk (or another milk of choice), oats, honey and cocoa powder, they are nearly foolproof because you just dump everything into the bowl and mix. I say nearly foolproof because there are a few places where this could go wrong (like burning the Nutella in the microwave, not that I have ever done that before…)
Oh and please feel free to lick the spoon.
First, microwave the Nutella, honey and milk together until it melts and then add the cocoa powder and oats. Grease a plate or baking tray and roll out little dough balls using a teaspoon and then flatten and place on the tray. Leave to cool and set in the fridge and there you have it, delicious cookie shaped pieces of heaven that come to 71 calories a piece!
See, I told you summer is awesome! It gives me another excuse to make cookies and that’s perfectly fine with me.
No Bake Nutella Oat Cookies

Yield: 12 cookies
Calories per serving: 71 calories
- 60g/ 1/4 cup
- 150g/ 1 2/3 cup
- 30ml/ 2 tbsp
Honey/ Liquid sweetener
- 12g / 1 tbsp
- 20ml /4 tsp
Almond milk/ milk of choice
1. Mix together the Nutella, honey and milk in a microwave safe bowl.
2. Microwave together for 30-60 seconds until melted and stir to combine.
3. Add in the cocoa powder and stir until mixed.
4. Mix in the oats and once combined, use a small spoon to measure out balls of dough.
5. Place the dough balls on a greased baking sheet or tray and flatten to form a cookie.
6. Leave to cool in the fridge for at least an hour and then serve.
7. Store any leftovers in the fridge and eat within 3-4 days.

For a greater hazelnut taste, you can replace the milk with hazelnut sugar-free syrup. I found mine in TKMaxx and it’s amazing for making low calorie hazelnut hot chocolate.
These can also be rolled into balls and made into energy bites instead.
